Some items expand while inside a vacuum due to a lack of pressure that is exerted on them by the atmosphere. Vacuumed marshmallows expand because you take away the weight of all that air press g on the outsidd so the trapped bubbles inside the marshmallow matrix expand. The weight and mass of the marshmallows, however, remain the same. The only physical change that is observable is volume.

Some items that are dense or do not contain any pockets of gas do not expand in a vacuum.

Yes, pardon me, dear Pup (peace to you!): I meant to post "some" things expand. What I meant was that it would make sense that our universe would expand in space... if the "vacuum" is space... given that (some) things do expand in a vacuum.
